STEELHEAD OR SALMON WITH JACK DANIEL'S SAUCE

1 OR 2 fillets of steelhead or salmon

Combine:
1/2 cup Jack Daniel's
1/2 cup brown sugar
1/2 cup soy sauce (or teriyaki)
4 cloves of garlic mashed
juice from 1/2 lemon

Marinade skinless fillets for 1 - 2 hours in a glass dish or a plastic bag. Get grill nice and hot, drain fillets and lay right on grate, turn once with 2 or 3 min a side. Take marinade and put in a pan to reduce. When sauce gets thick, remove from heat and drizzle on finished fillets. (also good on chicken!)

WALLEYE DIP

1 1/2 lbs walleye or any white fish
1/2 cup chopped white onions
1/2 cup miracle whip

Remove bones from fish fillets, drop into boiling salt water, cook until fish flakes (about 4 min) and drain in sink. Combine remaining items with fish, add salt and pepper to taste. (good on saltine crackers)

FRIED PERCH OR WALLEYE

fish fillets
mayo
seasoned breadcrumbs
garlic salt
fresh grated romano cheese
cajun seasoning
olive oil

Remove bones, wash and dry fillets (butterfly if thick). Use small plastic bag on hand to rub filets with light even coat of mayo. Combine remaining items, coat fish, then pan fry in olive oil until golden brown
